Roof or stars?

Due to the current covid situation me and my friend decided to stay off the beaten track on our 10 day trip around France, we had a rough idea of daily destinations but no set route to get to each one, we wild camped near lakes a rivers (for hygiene reasons). And planed the next days route over a bottle of wine once a suitable spot was found. It was awesome.

My wife also has a bike, and when we tour we always find nice hotels, often near towns so that a bit of site seeing and a nice restaurant feed is available. This is also awesome.

What's your preferences?

French locations for either style of stop over also greatly received.
